=== Industrial === Food: Biopolymers are being used in the food industry for things like packaging, edible encapsulation films and coating foods. Polylactic acid (PLA) is very common in the food industry due to is clear color and resistance to water. However, most polymers have a hydrophilic nature and start deteriorating when exposed to moisture. Biopolymers are also being used as edible films that encapsulate foods. These films can carry things like antioxidants, enzymes, probiotics, minerals, and vitamins. The food consumed encapsulated with the biopolymer film can supply these things to the body. Packaging: The most common biopolymers used in packaging are polyhydroxyalkanoates (PHAs), polylactic acid (PLA), and starch. Starch and PLA are commercially available and biodegradable, making them a common choice for packaging. However, their barrier properties (either moisture-barrier or gas-barrier properties) and thermal properties are not ideal. Hydrophilic polymers are not water resistant and allow water to get through the packaging which can affect the contents of the package. Polyglycolic acid (PGA) is a biopolymer that has great barrier characteristics and is now being used to correct the barrier obstacles from PLA and starch. Water purification: Chitosan has been used for water purification. It is used as a flocculant that only takes a few weeks or months rather than years to degrade in the environment. Chitosan purifies water by chelation. This is the process in which binding sites along the polymer chain bind with the metal ions in the water forming chelates.

== Characteristics == As a food ingredient, thaumatin is considered to be safe for consumption. In a chewing gum production plant, thaumatin has been identified as an allergen. Switching from using powdered thaumatin to liquid thaumatin reduced symptoms among affected workers. Additionally, eliminating contact with powdered gum arabic (a known allergen) resulted in the disappearance of symptoms in all affected workers. Thaumatin interacts with human TAS1R3 receptor to produce a sweet taste. The interacting residues are specific to old world monkeys and apes (including humans); only these animals can perceive it as sweet.
== Inhibitors == Elafin, the skin-derived elastase inhibitor, has been shown to be a potent and specific inhibitor of both the porcine homolog of ELA1 and human leukocyte elastase in vitro. Elafin is expressed by epidermal keratinocytes under hyperproliferative conditions such as psoriasis and wound healing. It has also been reported to be present in many other adult epithelia that are exposed to environmental stimuli: tongue, plate, lingual tonsils, gingiva, pharynx, epiglottis, vocal fold, esophagus, uterine cervix, vagina, and hair follicles. In all these tissues, the presence of inflammatory cells is physiologic and elafin expression is believed to protect against leukocyte proteases, thereby helping to maintain epithelial integrity. Elafin on the contrary has never been found in the basal layer in any type of epithelial tissue. Indeed, elafin is virtually absent in normal human epidermis. The other known elastase inhibitor, SLPI, however, has been reported to be expressed in the basal keratinocytes suggesting that this may be the major elastase inhibitor in normal epidermis. Alpha 1-antitrypsin and alpha-2-macroglobulin are human serum protease inhibitors that completely inhibit the general proteolytic activity of pancreatic elastase 1 and 2.
